About HYDOUT Cafe

HYDOUT Café was built from family, land, and a return that unfolded naturally.

Like many Vietnamese American families, parts of our history were not fully understood while growing up. Only later, through reconnecting, listening, and time spent back in Vietnam, did the fuller story come into focus. Where our family came from, how they survived, and the land that sustained them before everything changed.

As we began traveling back to Vietnam to learn and build, it was never a solo effort. Our aunt, cousins, and extended family opened doors. They reached out, made introductions, and connected us with farmers and producers across coffee, matcha, tea, agriculture, food and beverage, and functional mushrooms. These were not just sourcing relationships. They were guideposts back to our roots.

For our mother, coffee was never a lifestyle.
Coffee was survival.

She grew up during a time of rationing and real scarcity. Food was limited. Families fought over allocations. Desperation could turn dangerous because so many were simply trying to stay alive. That was the world she navigated.

We later learned she did not sell bags of beans or crafted drinks. She sold cups of coffee. She prepared them ahead of time, carried only what she could strap around her waist, and walked the streets selling coffee one cup at a time.

That detail sits at the heart of HYDOUT.

Because today, we are building this café the same way. One cup at a time. Now with more resources, deeper knowledge, and a responsibility to honor the land and the story behind every ingredient we use.

Our coffee roots lead us back to Vietnam’s highlands, including Đà Lạt. Our matcha sourcing reconnects us to Hà Nội, tied to our ancestral family line. Along the way, our close friend and business partner joined the journey. He learned directly from farms and worked alongside trusted partners in Vietnam so we could bring that craftsmanship and standard home without shortcuts.

Through this process, we also connected with growers and producers across Asia, including South Korea, Japan, and beyond. We shared knowledge around farming, processing, and quality. It reinforced what we believe deeply. The best work is built through learning, relationships, and respect for origin.

HYDOUT Café is built from family, but made for everyone.

To us, family is not only blood. It is how people gather. How meals are shared. How care shows up in everyday ways. We know not everyone has family close by, so HYDOUT is designed to be a welcoming space. Somewhere you can feel comfortable, grounded, and fed well.

We craft our food and drinks to be part of daily life. Things you return to, not trends you pass through. A cup that supports you through the day. A sandwich that feels familiar. A space that feels steady.

In every cup, we honor our mother and the generations who laid the foundation before us.
